A sweet and simple snack to make, heavy in antioxidants, not in sugar. These perfect little squares are no-bake, easy to prepare the night before, and pop out to take to work, on a hike, etc. They’re awesome to keep around the house as a snack, satisfying those late night sweet cravings, and are both smooth and crunchy in texture. Girl Scout Cookies BEWARE.


Dark Chocolate Bars (3)
Hemp Granola (1/2 Cup)
Coconut Flake (2 Tbsp)
Chia Seeds (1/2 Tbsp)
Coconut Oil Cooking Spray (found at Trader Joes)

**Parchment Paper
***Ice Cube Trays (2)


Create a double boiler with a medium sized glass bowl sitting on the top of a sauce pot of 3 cups simmering water.  I do this instead of microwaving because it produces a silkier chocolate consistency…and microwaving is bad for you anyway. Prepare ice cube trays by lightly spritzing with coconut oil spray. While the chocolate is melting, layer the ice cube tray with about 1/2 inch of the hemp granola (this will end up being the top of the snack when popped out of the tray), shake lightly to settle. Stir chocolate consistently until melted, remove from heat. Add chia seeds and coconut flake and combine well. Spoon about 2 tsp. chocolate mix into each tray, again shake lightly to settle (you can always add a little more granola on top for extra crunch!). Place in freezer overnight. Pop out of trays and shake off excess granola, wrap individually in parchment paper. Store in refrigerator and enjoy!
