Its delicious, almost caesar-y like in flavor, and has a crunchy texture due to everything in it being raw. Lemon juice, apple cider vinegar are great for your digestive system, hemp oil and walnut oil are healthy and flavorful fats, walnuts add protein, and of course your mother always told you to eat your brussel sprouts right?? Why not eat them and enjoy them! This salad lasts for days in the fridge, so we usually make a big batch and keep coming back for more.
***This salad is also great as a slaw on sandwiches, and is delicious topped with avocado
Brussel Sprouts (1lb)
Curly Kale (1 head de-veined)
Walnuts (1/2 cup)
***You can find washed and de-viened kale as well as pre-shredded brussel sprouts at Trader Joes…this is a big time saver if available
Lemon Zest (1/2 tsp)
Garlic (10 toes)
Apple Cider Vinegar (1 tbsp)
Agave (1 tsp)
Dijon (1 tbsp)
Walnut Oil (5 tbsp)
Hemp Oil (3 tbsp)

Prepare kale and brussel sprouts by washing and deveining kale, and removing the outer layer of each brussel sprout. Chop kale and using a mandoline, shred brussel sprouts one at a time. Combine together in a bowl. For the vinaigrette, zest one lemon, then juice both. Chop shallot and garlic, add to lemon juice. Add remaining ingredients and using a blender or food processor, blend well, for like, 5 minutes. This allows the oils to create a creamy consistency… salt and pepper to taste. Chop walnuts, and fold together kale, sprouts, dressing and walnuts, reserving a few walnuts for the top.
